We branched out today, buying a wee 300g–wheel of Le Chimay à la Bière, made by the Belgian Trappists known for their beer. Indeed, cheese bathed in beer—what can go wrong?
Our conclusion: fine fine lovely wonderful. Yum.

Was it a “stinky” cheese? We had a wine and cheese tasting party many years ago, and the beer cheese from Wisconsin got a thumbs down from almost everybody. The consensus was sweaty gym socks. Glad yours was better.

Has odor, but definitely NOT stinky. Rind has more (moldy?) pizzazz than interior. Flavor mostly aged cheese, and not off notes. Quite pleasant.
