Soup à la SW

I developed this recipe when I needed a fast meal, and was shopping at Trader Joe’s.

Optional: chop and saute some onion in a bit of oil in a wide-bottomed pot.

Dump in one box (32 oz.) of Creamy Corn and Roasted Red Pepper Soup.

Add a jar (12 oz.) Salsa Verde.

Bring to a simmer, then add 1/2 bag Roasted Corn (frozen). Simmer until veggies are cooked, then serve in a bowl.


Use tomato (based) soup and tomato salsa.

Use different veggies.

Cube some cooked chicken or turkey and add along with the box of soup.

Sprinkle on some cheese or add a nubbin of goat cheese to each bowl.
